Sunflower Berry Smoothie

Welcome to this week’s #notjustagarnish recipe! With temps heating up this July, there’s nothing more refreshing than a smoothie…so we made one! This frozen berry-sunflower concoction has a beautiful fruity flavor with just a hint of that micro sunflower you know and love.

Sunflower shoots are one of our favorite microgreens because of their big flavor and nutty crunch. Beyond the amazing taste, they’re jam-packed with fiber, protein, essential fatty acids, vitamins A, B complex, C, D and E. They also contain calcium, phosphorous, iron, iodine, potassium, magnesium and the trace elements zinc, manganese, copper and chromium - wow!

Sunflower Berry Smoothie

Yields: 2 servings
Prep Time: 10 minutes


Ingredients:

1/2 cup sunflower microgreens
1 cup blueberries (fresh or frozen)
1 cup raspberries (fresh or frozen)
Handful of ice, if using fresh berries
1 tbsp honey or other sweetener
Dash of almond milk or other liquid

Directions:

Add micros, berries, ice, and almond milk to a blender and pulse. Taste and add sweetener if needed. To make the smoothie more liquid, add more almond milk.

Pour and enjoy!
